- Jalapeños - 6 medium
- Raw cashews - 100 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Soak the raw cashews in water for at least 30 minutes, then drain and rinse.
- In a blender or food processor, combine the soaked cashews, nutritional yeast, garlic powder, onion powder, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy.
- Cut the jalapeños in half lengthwise and remove the seeds and membranes carefully.
- Fill each jalapeño half with the cashew mixture, using a spoon or a piping bag for easier filling.
- Place the stuffed jalapeños on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes, until the jalapeños are tender and the filling is slightly golden.
- Remove from the oven and allow to cool for a few minutes before serving. Garnish with fresh cilantro.
