Ingredients

  • Jalapeños - 6 medium
  • Raw cashews - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Soak the raw cashews in water for at least 30 minutes, then drain and rinse.
  3. In a blender or food processor, combine the soaked cashews, nutritional yeast, garlic powder, onion powder, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy.
  4. Cut the jalapeños in half lengthwise and remove the seeds and membranes carefully.
  5. Fill each jalapeño half with the cashew mixture, using a spoon or a piping bag for easier filling.
  6. Place the stuffed jalapeños on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 20 minutes, until the jalapeños are tender and the filling is slightly golden.
  8. Remove from the oven and allow to cool for a few minutes before serving. Garnish with fresh cilantro.
