Ingredients

  • Grape leaves - 12 large leaves
  • Long-grain rice - 100 grams
  • Ground beef - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Tomato paste - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 milliliters

Steps

  1. Rinse the grape leaves in cold water and set aside to soak in warm water for about 30 minutes to soften.
  2. In a medium bowl, combine the rice, ground beef, chopped onion, minced garlic, parsley, mint, tomato paste, lemon juice, olive oil, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  3. Place a grape leaf on a flat surface, stem side facing you. Place about 1 tablespoon of the filling near the stem end and fold the sides over the filling. Roll tightly from the stem end to the tip of the leaf. Repeat with remaining leaves and filling.
  4. In a large pot, arrange the stuffed grape leaves seam side down in a single layer. Add 250ml of water to the pot, cover with a lid, and bring to a gentle simmer over medium heat.
  5. Reduce the heat to low and cook for about 30-40 minutes until the rice is tender and the grape leaves are soft. Check occasionally to ensure there is enough liquid to prevent sticking.
  6. Once cooked, remove from heat and let sit covered for 10 minutes before serving. Drizzle with additional lemon juice and olive oil if desired.
