Ingredients

  • Green cabbage - 1 medium head
  • Ground beef (or turkey) - 250 grams
  • Cooked white rice - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato sauce - 200 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water for about 5 minutes, or until the leaves soften. Remove the cabbage and set aside to cool.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. In a mixing bowl, combine the ground beef, cooked rice, sautéed onion and garlic, chopped parsley, salt, black pepper, and paprika. Mix until well combined.
  4. Once the cabbage is cool enough to handle, carefully peel off the leaves. Place about 2 tablespoons of the meat mixture at the base of each leaf, fold in the sides, and roll it up tightly.
  5. In a large pot, spread a thin layer of tomato sauce on the bottom. Arrange the stuffed cabbage rolls seam-side down in the pot. Pour the remaining tomato sauce over the rolls and drizzle with lemon juice.
  6. Cover the pot and simmer on low heat for about 30-40 minutes, until the meat is cooked through and the flavors meld together.
  7. Serve hot, garnished with additional parsley if desired.
