Ingredients
- Green cabbage - 1 medium head
- Ground beef (or turkey) - 250 grams
- Cooked white rice - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato sauce - 200 grams
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water for about 5 minutes, or until the leaves soften. Remove the cabbage and set aside to cool.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- In a mixing bowl, combine the ground beef, cooked rice, sautéed onion and garlic, chopped parsley, salt, black pepper, and paprika. Mix until well combined.
- Once the cabbage is cool enough to handle, carefully peel off the leaves. Place about 2 tablespoons of the meat mixture at the base of each leaf, fold in the sides, and roll it up tightly.
- In a large pot, spread a thin layer of tomato sauce on the bottom. Arrange the stuffed cabbage rolls seam-side down in the pot. Pour the remaining tomato sauce over the rolls and drizzle with lemon juice.
- Cover the pot and simmer on low heat for about 30-40 minutes, until the meat is cooked through and the flavors meld together.
- Serve hot, garnished with additional parsley if desired.
