Ingredients
- 2 large bell peppers (any color) - 400 grams
- 250 grams ground turkey
- 1 small onion - 100 grams, diced
- 1 clove garlic - 5 grams, minced
- 1 cup cauliflower rice - 100 grams
- 1 cup diced tomatoes - 240 grams, canned or fresh
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup shredded mozzarella cheese - 60 grams
- 1 tablespoon olive oil - 15 ml
- Fresh parsley - for garnish
Steps
- Preheat the oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the ground turkey to the skillet and cook until browned, about 5-7 minutes.
- Stir in the cauliflower rice, diced tomatoes, oregano, paprika, black pepper, and salt. Cook for an additional 5 minutes until heated through.
- Remove the skillet from heat and stir in half of the shredded mozzarella cheese.
- Stuff each bell pepper with the turkey mixture, pressing down to pack it in.
- Sprinkle the remaining mozzarella cheese on top of the stuffed peppers.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
