- 1/2 cup uncooked brown rice - 90g
- 1/2 cup cooked lentils - 100g
- 1 small onion, diced - 70g
- 2 cloves garlic, minced - 6g
- 1 teaspoon ground cumin - 2g
- 1 teaspoon paprika - 2g
- 1 tablespoon olive oil - 15ml
- 1/2 cup diced tomatoes (canned or fresh) - 120g
- 1/4 cup vegetable broth - 60ml
- Salt to taste - 1g
- Black pepper to taste - 1g
- Fresh parsley, chopped (for garnish) - 5g
Steps
- Preheat your oven to 180°C (350°F).
- Cook the brown rice according to package instructions, then set aside.
- In a medium skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Stir in the cooked lentils, ground cumin, paprika, diced tomatoes, vegetable broth, salt, and black pepper. Cook for another 5 minutes until heated through.
- In a large bowl, combine the cooked rice with the lentil mixture and stir until well mixed.
- Carefully slice the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
- Stuff each bell pepper with the rice and lentil mixture, packing it in gently.
- Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, allowing the tops to brown slightly.
- Garnish with chopped fresh parsley before serving.
