- Black beans - 1/2 cup (cooked, drained, and rinsed)
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon

- Shredded cheese (cheddar or mozzarella) - 1 cup
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the quinoa under cold water and then combine it with vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the liquid is absorbed.
- While the quinoa is cooking, prepare the bell peppers by cutting the tops off and removing the seeds and membranes. Set aside.
- In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced zucchini, corn, black beans, cumin, chili powder, salt, and pepper to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
- Once the quinoa is cooked, fluff it with a fork and add it to the skillet, mixing well with the vegetables. Stir in 3/4 cup of shredded cheese until melted and combined.
- Stuff each bell pepper with the quinoa and vegetable mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish. Sprinkle the remaining cheese on top of each pepper.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
