  • Bell peppers - 2 large
  • Cooked lentils - 1 cup
  • Canned chickpeas - 1/2 cup, drained and rinsed
  • Fresh spinach - 1 cup, chopped
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon

  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 1/4 cup
  • Parmesan cheese - 2 tablespoons, grated (optional)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.

  6. Stuff each bell pepper with the lentil and spinach mixture, packing it tightly.
  7. Place the stuffed peppers upright in a baking dish and cover with foil.
  8. Bake in the preheated oven for 25 minutes. Remove the foil and sprinkle Parmesan cheese on top if using, then bake for an additional 5 minutes until the cheese is melted and the peppers are tender.
