- 2 large bell peppers - any color
- 1 cup cooked lentils
- 1 cup cooked chickpeas
- 1 cup fresh spinach, chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Stir in the cooked lentils, chickpeas, chopped spinach, cumin, smoked paprika, salt, and pepper. Cook for 5-7 minutes until the spinach is wilted.
- Fill each bell pepper with the lentil and spinach mixture, pressing down gently to pack it.
- Place the stuffed peppers upright in a baking dish. If using, sprinkle shredded cheese on top.
- Add a splash of water to the bottom of the baking dish to create steam, then cover with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and cheese is melted.
- Garnish with fresh parsley before serving.
