- 2 large bell peppers (any color)
- 1 cup cooked chickpeas
- 1 cup cooked lentils
- 1 small onion - diced
- 2 cloves garlic - minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup diced tomatoes (canned or fresh)
- 2 tablespoons fresh parsley - chopped
- 1/4 cup shredded cheese (optional, for topping)
Steps
- Preheat your oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the cooked chickpeas, lentils, diced tomatoes, cumin, smoked paprika, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through.
- Remove the skillet from heat and stir in the chopped parsley.
- Stuff each bell pepper with the chickpea and lentil mixture, packing it tightly.
- Place the stuffed peppers upright in a baking dish. If desired, sprinkle shredded cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is bubbly (if using).
- Allow to cool slightly before serving.
