- 2 large bell peppers (any color) - 300 grams
- 200 grams ground beef (80/20 lean to fat ratio)
- 1 small onion - 100 grams, finely chopped
- 1 clove garlic - 3 grams, minced
- 100 grams cauliflower rice
- 50 grams shredded cheddar cheese
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt - to taste
- Pepper - to taste
- 1 tablespoon olive oil - 15 ml
Steps
- Preheat the oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the cauliflower rice, paprika, Italian seasoning, salt, and pepper. Cook for another 3-4 minutes until the cauliflower is tender.
- Remove the skillet from heat and stir in half of the shredded cheddar cheese.
- Stuff each bell pepper with the beef mixture, packing it tightly.
- Place the stuffed peppers upright in a baking dish and sprinkle the remaining cheddar cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes before serving.
