Ingredients

  • 2 large bell peppers - any color
  • 100 grams ground beef or chicken
  • 100 grams cooked rice
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes (canned or fresh)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley - chopped (for garnish)
  • 1/4 cup shredded mozzarella cheese (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes, setting the tops aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the ground meat to the skillet, cooking until browned and fully cooked, approximately 5-7 minutes.
  5. Stir in cooked rice, diced tomatoes, cumin, paprika, salt, and black pepper. Mix well and let simmer for 5 minutes to absorb the flavors.
  6. Stuff each bell pepper with the rice mixture, pressing down gently to pack it in. If desired, sprinkle shredded mozzarella cheese on top.
  7. Place the stuffed peppers upright in a baking dish. If using, place the tops of the peppers back on.
  8. Add 1/2 cup of water to the bottom of the baking dish to create steam during cooking.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly.
  11. Garnish with fresh parsley before serving.
