- 2 large bell peppers - any color
- 100 grams ground beef or chicken
- 100 grams cooked rice
- 1 small onion - finely chopped
- 2 cloves garlic - minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced tomatoes (canned or fresh)
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley - chopped (for garnish)
- 1/4 cup shredded mozzarella cheese (optional)
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes, setting the tops aside.
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the ground meat to the skillet, cooking until browned and fully cooked, approximately 5-7 minutes.
- Stir in cooked rice, diced tomatoes, cumin, paprika, salt, and black pepper. Mix well and let simmer for 5 minutes to absorb the flavors.
- Stuff each bell pepper with the rice mixture, pressing down gently to pack it in. If desired, sprinkle shredded mozzarella cheese on top.
- Place the stuffed peppers upright in a baking dish. If using, place the tops of the peppers back on.
- Add 1/2 cup of water to the bottom of the baking dish to create steam during cooking.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly.
- Garnish with fresh parsley before serving.
