Ingredients

  • 200g sweet potato - peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup cooked quinoa
  • 1/4 cup breadcrumbs
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lime juice
  • 2 whole wheat burger buns
  • 1/2 avocado - sliced
  • 1 cup lettuce leaves

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, toss the cubed sweet potato with olive oil, salt, pepper, garlic powder, and smoked paprika.
  3. Spread the sweet potato on a baking sheet and roast for about 20 minutes or until tender.
  4. In a mixing bowl, mash the roasted sweet potato using a fork.
  5. Add the cooked quinoa, breadcrumbs, Sriracha sauce, soy sauce, and lime juice to the mashed sweet potato. Mix until well combined.
  6. Form the mixture into two patties.
  7. Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side, or until golden brown.
  8. Toast the whole wheat burger buns in the skillet for a minute until lightly crispy.
  9. Assemble the burgers by placing the sweet potato patties on the buns, topped with sliced avocado and lettuce leaves.
