- 200g sweet potato - peeled and cubed
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 cup cooked quinoa
- 1/4 cup breadcrumbs
- 2 tablespoons Sriracha sauce
- 1 tablespoon soy sauce
- 1 tablespoon fresh lime juice
- 2 whole wheat burger buns
- 1/2 avocado - sliced
- 1 cup lettuce leaves
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, toss the cubed sweet potato with olive oil, salt, pepper, garlic powder, and smoked paprika.
- Spread the sweet potato on a baking sheet and roast for about 20 minutes or until tender.
- In a mixing bowl, mash the roasted sweet potato using a fork.
- Add the cooked quinoa, breadcrumbs, Sriracha sauce, soy sauce, and lime juice to the mashed sweet potato. Mix until well combined.
- Form the mixture into two patties.
- Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side, or until golden brown.
- Toast the whole wheat burger buns in the skillet for a minute until lightly crispy.
- Assemble the burgers by placing the sweet potato patties on the buns, topped with sliced avocado and lettuce leaves.
