Steps
- Preheat the oven to 200°C (400°F).
- Peel and cut the sweet potatoes into 1-inch thick rounds. Place them on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast in the preheated oven for about 25-30 minutes or until tender and slightly crispy.
- In a mixing bowl, combine the ground squirrel meat, diced onion, minced garlic, chopped parsley, egg, smoked paprika, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal patties.
