Ingredients

  • Butternut squash - 200 grams
  • Almond flour - 100 grams
  • Coconut oil - 30 grams (melted)
  • Honey - 30 grams
  • Egg - 1 large
  • Cinnamon - 1 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the butternut squash in half, remove the seeds, and place it cut-side down on a baking tray. Roast in the oven for about 30 minutes, or until tender.
  3. Once the squash is cooked, scoop out the flesh and place it in a mixing bowl. Mash it until smooth.
  4. Add the melted coconut oil, honey, egg, cinnamon, nutmeg, salt, and vanilla extract to the mashed squash. Mix until well combined.
  5. In another bowl, mix the almond flour with a pinch of salt.
  6. Gradually add the almond flour to the squash mixture, stirring until a thick batter forms.
  7. Grease two small pie dishes with coconut oil and evenly distribute the batter into each dish.
  8. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.
  9. Allow the pies to cool slightly before serving. Enjoy warm or at room temperature.
