- Butternut squash - 200 grams
- Almond flour - 100 grams
- Coconut oil - 30 grams (melted)
- Honey - 30 grams
- Egg - 1 large
- Cinnamon - 1 teaspoon
- Nutmeg - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Cut the butternut squash in half, remove the seeds, and place it cut-side down on a baking tray. Roast in the oven for about 30 minutes, or until tender.
- Once the squash is cooked, scoop out the flesh and place it in a mixing bowl. Mash it until smooth.
- Add the melted coconut oil, honey, egg, cinnamon, nutmeg, salt, and vanilla extract to the mashed squash. Mix until well combined.
- In another bowl, mix the almond flour with a pinch of salt.
- Gradually add the almond flour to the squash mixture, stirring until a thick batter forms.
- Grease two small pie dishes with coconut oil and evenly distribute the batter into each dish.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.
