Ingredients

  • Fresh spinach - 300 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Potato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Heavy cream - 2 tablespoons (optional)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced potato to the pot, cooking for another 3-4 minutes until the garlic is fragrant.
  3. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 10-15 minutes, or until the potato is tender.
  4. Add the fresh spinach, salt, black pepper, and nutmeg to the pot. Cook for an additional 5 minutes until the spinach is wilted.
  5. Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you prefer, you can also transfer the soup in batches to a blender.
  6. Return the soup to the heat, stir in the heavy cream if using, and warm through for 2-3 minutes before serving.
