- Fresh spinach - 300 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Potato - 1 medium, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
- Heavy cream - 2 tablespoons (optional)
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced potato to the pot, cooking for another 3-4 minutes until the garlic is fragrant.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 10-15 minutes, or until the potato is tender.
- Add the fresh spinach, salt, black pepper, and nutmeg to the pot. Cook for an additional 5 minutes until the spinach is wilted.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you prefer, you can also transfer the soup in batches to a blender.
- Return the soup to the heat, stir in the heavy cream if using, and warm through for 2-3 minutes before serving.
