Ingredients

  • Long-grain white rice - 1 cup
  • Fresh spinach - 150 grams, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the rice to the saucepan and stir well to coat the grains with oil. Toast the rice for about 2-3 minutes, stirring frequently.
  4. Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
  5. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  6. While the rice is cooking, in a separate pan, lightly sauté the chopped spinach in a bit of olive oil until wilted, about 3-4 minutes. Season with lemon juice.
  7. Once the rice is done, fluff it with a fork and fold in the sautéed spinach. Mix well and adjust seasoning if necessary.
  8. Serve warm, topped with grated Parmesan cheese if desired.
