- Long-grain white rice - 1 cup
- Fresh spinach - 150 grams, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rice to the saucepan and stir well to coat the grains with oil. Toast the rice for about 2-3 minutes, stirring frequently.
- Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, in a separate pan, lightly sauté the chopped spinach in a bit of olive oil until wilted, about 3-4 minutes. Season with lemon juice.
- Once the rice is done, fluff it with a fork and fold in the sautéed spinach. Mix well and adjust seasoning if necessary.
- Serve warm, topped with grated Parmesan cheese if desired.
