Ingredients
- fresh spinach - 200 grams
- feta cheese - 100 grams, crumbled
- ricotta cheese - 100 grams
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- olive oil - 2 tablespoons
- egg - 1 large, beaten
- phyllo dough - 4 sheets
- salt - 1/2 teaspoon
- pepper - 1/4 teaspoon
- nutmeg - a pinch
Steps
- Preheat your oven to 190°C (375°F).
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the fresh spinach, cooking until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the feta cheese, ricotta cheese, beaten egg, salt, pepper, and nutmeg. Add the cooled spinach mixture and mix well.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Layer a second sheet on top and brush with oil again. Repeat for a total of 4 sheets.
- Spoon the spinach and cheese mixture along one edge of the phyllo dough. Fold the sides over and roll tightly to form a log.
- Place the rolled pie seam-side down on a baking sheet lined with parchment paper. Brush the top with olive oil.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
- Allow to cool for a few minutes before slicing and serving.
