Ingredients

  • Whole wheat tortillas - 2
  • Fresh spinach - 150 grams
  • Mushrooms (sliced) - 150 grams
  • Shredded mozzarella cheese - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Onion (finely chopped) - 1 small
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin powder - 1/4 teaspoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the sliced mushrooms, cumin, salt, and black pepper. Cook until the mushrooms are soft, around 5 minutes.
  4. Add the fresh spinach to the skillet, cooking until wilted, about 2 minutes. Remove from heat.
  5. Place one tortilla in a clean skillet over medium heat. Sprinkle half of the mozzarella cheese on one half of the tortilla.
  6. Spoon half of the spinach and mushroom mixture over the cheese, then fold the tortilla in half to cover the filling.
  7. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese has melted.
  8. Repeat the process with the second tortilla and remaining ingredients.
  9. Cut each quesadilla into wedges and serve warm.
