  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  5. In a bowl, whisk together the eggs, salt, black pepper, and red pepper flakes until well combined.
