Ingredients

  • Eggs - 4 large
  • Fresh spinach - 100 grams
  • Feta cheese - 75 grams, crumbled
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/4 teaspoon
  • Onion powder - 1/4 teaspoon

Steps

  1. In a medium bowl, whisk together the eggs, salt, black pepper, garlic powder, and onion powder until well combined.
  2. In a non-stick skillet, heat the olive oil over medium heat.
  3. Add the fresh spinach to the skillet and sauté for 2-3 minutes until wilted.
  4. Pour the egg mixture over the spinach, tilting the skillet to ensure even coverage.
  5. Cook for about 2-3 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.
  6. Once the eggs are mostly set, sprinkle the crumbled feta cheese evenly over one half of the omelette.
  7. Carefully fold the omelette in half over the feta and cook for an additional 1-2 minutes, or until the eggs are fully cooked and the cheese is slightly melted.
  8. Slide the omelette onto a plate and cut in half to serve.
