Ingredients

  • Fresh spinach - 150 grams
  • Feta cheese - 100 grams, crumbled
  • Chickpeas - 200 grams, drained and rinsed
  • Breadcrumbs - 50 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the chickpeas, wilted spinach mixture, crumbled feta cheese, breadcrumbs, egg, salt, pepper, and paprika. Mash the mixture with a fork or potato masher until combined but still slightly chunky.
  4. Form the mixture into two burger patties. If the mixture is too wet, add more breadcrumbs as needed.
  5. Wipe the skillet clean and add the remaining tablespoon of olive oil. Heat over medium heat and cook the patties for about 5-6 minutes on each side until golden brown and heated through.
  6. Toast the burger buns in the skillet for about 1-2 minutes until lightly browned.
  7. Assemble the burgers by placing a lettuce leaf on each bun, followed by the spinach feta patty, and top with sliced tomato. Serve immediately.
