Ingredients

  • Frozen puff pastry - 1 sheet (about 250g)
  • Fresh spinach - 200g, chopped
  • Feta cheese - 100g, crumbled
  • Ricotta cheese - 50g
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Egg - 1, beaten (for egg wash)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, ricotta cheese, salt, and black pepper. Mix well until combined.
  5. Roll out the thawed puff pastry on a lightly floured surface and cut it into squares (approximately 10x10 cm each).
  6. Place a tablespoon of the spinach filling in the center of each square.
  7. Fold the pastry over to form a triangle and press the edges to seal tightly. You can crimp the edges with a fork for a decorative touch.
  8. Brush the tops of the bourekas with the beaten egg and sprinkle with sesame seeds if desired.
  9. Place the bourekas on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until golden brown and puffed.
  10. Remove from the oven and let cool slightly before serving.
