- Frozen puff pastry - 1 sheet (about 250g)
- Fresh spinach - 200g, chopped
- Feta cheese - 100g, crumbled
- Ricotta cheese - 50g
- Garlic - 1 clove, minced
- Onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Egg - 1, beaten (for egg wash)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame seeds - 1 tablespoon (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, ricotta cheese, salt, and black pepper. Mix well until combined.
- Roll out the thawed puff pastry on a lightly floured surface and cut it into squares (approximately 10x10 cm each).
- Place a tablespoon of the spinach filling in the center of each square.
- Fold the pastry over to form a triangle and press the edges to seal tightly. You can crimp the edges with a fork for a decorative touch.
- Brush the tops of the bourekas with the beaten egg and sprinkle with sesame seeds if desired.
- Place the bourekas on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until golden brown and puffed.
- Remove from the oven and let cool slightly before serving.
