- Fresh spinach - 150 grams
- Ricotta cheese - 100 grams
- Shredded mozzarella cheese - 50 grams
- Parmesan cheese - 30 grams, grated
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Olive oil - 1 tablespoon
- Vegetable broth - 1/2 cup
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
- Bread crumbs - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- Heat olive oil in a skillet over medium heat, then add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the fresh spinach to the skillet, cooking until wilted, about 3-4 minutes. Remove from heat.
- In a bowl, combine the cooked brown rice, sautéed spinach mixture, ricotta cheese, vegetable broth, salt, black pepper, and nutmeg. Mix well.
- Transfer the mixture to a baking dish and spread evenly.
- Sprinkle the shredded mozzarella and grated Parmesan cheese on top, followed by the bread crumbs.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
