  • Cooked brown rice - 1 cup
  • Fresh spinach - 150 grams
  • Ricotta cheese - 100 grams
  • Shredded mozzarella cheese - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Olive oil - 1 tablespoon
  • Vegetable broth - 1/2 cup
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Bread crumbs - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Heat olive oil in a skillet over medium heat, then add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the fresh spinach to the skillet, cooking until wilted, about 3-4 minutes. Remove from heat.
  4. In a bowl, combine the cooked brown rice, sautéed spinach mixture, ricotta cheese, vegetable broth, salt, black pepper, and nutmeg. Mix well.
  5. Transfer the mixture to a baking dish and spread evenly.
  6. Sprinkle the shredded mozzarella and grated Parmesan cheese on top, followed by the bread crumbs.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  8. Remove from the oven, let it cool for a few minutes, then serve warm.
