  • Fresh spinach - 100 grams
  • Feta cheese - 75 grams, crumbled
  • Eggs - 4 large
  • Tortillas - 2 large (whole wheat or regular)
  • Olive oil - 1 tablespoon

  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Cherry tomatoes - 100 grams, halved (for garnish)
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add fresh spinach to the skillet and sauté for 2-3 minutes until wilted.
  3. In a bowl, crack the eggs and whisk them together with salt, black pepper, and red pepper flakes if using.
  4. Pour the beaten eggs into the skillet with the sautéed spinach and cook, stirring gently, until the eggs are scrambled and just set (about 3-4 minutes).
  5. Remove the skillet from heat and stir in the crumbled feta cheese until well combined.
  6. Warm the tortillas in a separate skillet or microwave for a few seconds until pliable.
