  • Whole wheat pie crust - 1 (9-inch)
  • Fresh spinach - 150 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Eggs - 3 large
  • Milk - 120 ml (½ cup)
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Onion - ½ medium, diced
  • Salt - ¼ teaspoon
  • Black pepper - ¼ teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat olive oil over medium heat and sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, whisk together the eggs, milk, salt, black pepper, and nutmeg.
  5. Stir in the crumbled feta cheese and the cooled spinach mixture until well combined.
  6. Place the whole wheat pie crust into a 9-inch pie dish and pour the spinach and feta mixture into the crust.
  7. Bake in the preheated oven for 30 minutes or until the quiche is set and the top is lightly golden.
  8. Allow to cool for 5 minutes before slicing and serving.
