- Whole wheat pie crust - 1 (9-inch)
- Fresh spinach - 150 grams, chopped
- Feta cheese - 100 grams, crumbled
- Eggs - 3 large
- Milk - 120 ml (½ cup)
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Onion - ½ medium, diced
- Salt - ¼ teaspoon
- Black pepper - ¼ teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet, heat olive oil over medium heat and sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, whisk together the eggs, milk, salt, black pepper, and nutmeg.
- Stir in the crumbled feta cheese and the cooled spinach mixture until well combined.
- Place the whole wheat pie crust into a 9-inch pie dish and pour the spinach and feta mixture into the crust.
- Bake in the preheated oven for 30 minutes or until the quiche is set and the top is lightly golden.
- Allow to cool for 5 minutes before slicing and serving.
