Ingredients

  • Puff pastry - 200 grams
  • Fresh spinach - 150 grams
  • Vegan feta cheese - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Plant-based milk - 1 tablespoon (for brushing)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat, then add the chopped onion and garlic, sautéing until translucent.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
  4. In a mixing bowl, crumble the vegan feta cheese and combine it with the wilted spinach mixture, nutritional yeast, lemon juice, black pepper, and salt. Mix well.
  5. Roll out the puff pastry on a floured surface and cut it into 4 equal squares.
  6. Place a generous spoonful of the spinach and feta mixture in the center of each pastry square.
  7. Fold the corners of the pastry over the filling to create a triangle and press the edges to seal. Use a fork to crimp the edges for an extra seal.
  8. Brush the tops of the puffs with plant-based milk to give them a nice golden color when baked.
  9. Arrange the puffs on a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.
  11. Remove from the oven and let cool slightly before serving.
