- Puff pastry - 200 grams
- Fresh spinach - 150 grams
- Vegan feta cheese - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Plant-based milk - 1 tablespoon (for brushing)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat the olive oil over medium heat, then add the chopped onion and garlic, sautéing until translucent.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
- In a mixing bowl, crumble the vegan feta cheese and combine it with the wilted spinach mixture, nutritional yeast, lemon juice, black pepper, and salt. Mix well.
- Roll out the puff pastry on a floured surface and cut it into 4 equal squares.
- Place a generous spoonful of the spinach and feta mixture in the center of each pastry square.
- Fold the corners of the pastry over the filling to create a triangle and press the edges to seal. Use a fork to crimp the edges for an extra seal.
- Brush the tops of the puffs with plant-based milk to give them a nice golden color when baked.
- Arrange the puffs on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.
- Remove from the oven and let cool slightly before serving.
