Ingredients

  • Fresh spinach - 150 grams
  • Feta cheese - 100 grams, crumbled
  • Phyllo pastry sheets - 4 sheets
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the fresh spinach, cooking until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  5. In a bowl, mix the cooked spinach and onion mixture with crumbled feta cheese, beaten egg, salt, black pepper, and nutmeg.
  6. Lay one phyllo sheet on a clean surface and brush with olive oil. Place another sheet on top and brush again. Repeat with two more sheets.
  7. Spoon the spinach and feta filling along one edge of the phyllo sheets, leaving a small border. Fold the sides over the filling and roll the phyllo to form a log.
  8. Place the rolled pie seam-side down on a baking sheet lined with parchment paper. Brush the top with olive oil.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before slicing. Serve warm.
