- Fresh spinach - 150 grams
- Feta cheese - 100 grams, crumbled
- Phyllo pastry sheets - 4 sheets
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Egg - 1, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the fresh spinach, cooking until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a bowl, mix the cooked spinach and onion mixture with crumbled feta cheese, beaten egg, salt, black pepper, and nutmeg.
- Lay one phyllo sheet on a clean surface and brush with olive oil. Place another sheet on top and brush again. Repeat with two more sheets.
- Spoon the spinach and feta filling along one edge of the phyllo sheets, leaving a small border. Fold the sides over the filling and roll the phyllo to form a log.
- Place the rolled pie seam-side down on a baking sheet lined with parchment paper. Brush the top with olive oil.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before slicing. Serve warm.
