Ingredients
- Frozen puff pastry - 1 sheet (250g)
- Fresh spinach - 200g, chopped
- Feta cheese - 100g, crumbled
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Egg - 1, beaten (for egg wash)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame seeds - 1 tablespoon (optional, for topping)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and chopped spinach to the skillet, cooking until the spinach is wilted and any excess moisture has evaporated, about 5-7 minutes.
- Remove the skillet from heat and stir in the crumbled feta cheese, salt, and black pepper. Allow the mixture to cool slightly.
- Roll out the puff pastry on a lightly floured surface and cut it into 4 equal squares.
- Place a generous tablespoon of the spinach and feta mixture in the center of each pastry square.
- Fold the pastry over to form a triangle and press the edges together to seal, using a fork to crimp them if desired.
- Brush the tops of the bourekas with the beaten egg and sprinkle with sesame seeds if using.
- Place the bourekas on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
