  • Feta cheese - 50 grams, crumbled
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Pie crust - 1 (9-inch, pre-made or homemade)
  • Sesame seeds - 1 tablespoon (optional, for topping)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat olive oil over medium heat, then add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine ricotta cheese, crumbled feta cheese, egg, salt, black pepper, and nutmeg. Mix well.
  5. Fold in the sautéed spinach and onion mixture into the cheese mixture until well combined.
  6. Roll out the pie crust and fit it into a 9-inch pie dish. Pour the spinach and cheese filling into the crust, spreading it evenly.
  7. If desired, sprinkle sesame seeds on top of the filling for added texture.
  8. Bake in the preheated oven for about 25-30 minutes, or until the pie is golden brown and set.
