- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Onion - 1 small, finely chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
- Pie crust - 1 (9-inch, pre-made or homemade)
- Sesame seeds - 1 tablespoon (optional, for topping)
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet, heat olive oil over medium heat, then add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine ricotta cheese, crumbled feta cheese, egg, salt, black pepper, and nutmeg. Mix well.
- Fold in the sautéed spinach and onion mixture into the cheese mixture until well combined.
- Roll out the pie crust and fit it into a 9-inch pie dish. Pour the spinach and cheese filling into the crust, spreading it evenly.
- If desired, sprinkle sesame seeds on top of the filling for added texture.
- Bake in the preheated oven for about 25-30 minutes, or until the pie is golden brown and set.
- Allow to cool for a few minutes before slicing and serving.
