Ingredients

  • Frozen puff pastry - 1 sheet (about 250g)
  • Fresh spinach - 200g, chopped
  • Ricotta cheese - 100g
  • Feta cheese - 75g, crumbled
  • Egg - 1, beaten (for egg wash)
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional, for topping)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the cooked spinach, ricotta cheese, crumbled feta, salt, and black pepper. Mix until well combined.
  5. Roll out the frozen puff pastry on a lightly floured surface to smooth out any creases. Cut the pastry into 4 equal squares.
  6. Place a generous tablespoon of the spinach and cheese mixture in the center of each pastry square.
  7. Fold the pastry over to form a triangle, sealing the edges by pressing with a fork or your fingers.
  8. Brush the tops of the bourekas with the beaten egg and sprinkle with sesame seeds, if using.
  9. Place the bourekas on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  10. Remove from the oven and let cool for a few minutes before serving.
