Ingredients

  • Jasmine rice - 1 cup
  • Water - 1.5 cups
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Shallot, minced - 1 medium
  • Red bell pepper, diced - 1/2 cup
  • Carrot, julienned - 1/2 cup
  • Snap peas, trimmed - 1/2 cup
  • Thai red curry paste - 2 tablespoons
  • Soy sauce (kosher) - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Chili flakes - 1/2 teaspoon
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then cover and reduce heat to low. Cook for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. While the rice is cooking, heat the vegetable oil in a large skillet over medium heat.
  4. Add the minced garlic and shallot to the skillet, sautéing for about 1-2 minutes until fragrant.
  5. Stir in the diced red bell pepper, julienned carrot, and snap peas. Sauté for 3-4 minutes until the vegetables are just tender.
  6. Add the Thai red curry paste, soy sauce, lime juice, and chili flakes to the skillet. Mix well to combine and cook for an additional 2 minutes.
  7. Fluff the cooked jasmine rice with a fork and add it to the skillet with the vegetables. Toss everything together until well combined.
  8. Taste and adjust seasoning with salt if necessary. Garnish with fresh cilantro before serving.
