- Shallot, minced - 1 medium
- Red bell pepper, diced - 1/2 cup
- Carrot, julienned - 1/2 cup
- Snap peas, trimmed - 1/2 cup
- Thai red curry paste - 2 tablespoons
- Soy sauce (kosher) - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro, chopped - 2 tablespoons
- Chili flakes - 1/2 teaspoon
- Salt - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then cover and reduce heat to low. Cook for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the rice is cooking, heat the vegetable oil in a large skillet over medium heat.
- Add the minced garlic and shallot to the skillet, sautéing for about 1-2 minutes until fragrant.
- Stir in the diced red bell pepper, julienned carrot, and snap peas. Sauté for 3-4 minutes until the vegetables are just tender.
- Add the Thai red curry paste, soy sauce, lime juice, and chili flakes to the skillet. Mix well to combine and cook for an additional 2 minutes.
- Fluff the cooked jasmine rice with a fork and add it to the skillet with the vegetables. Toss everything together until well combined.
- Taste and adjust seasoning with salt if necessary. Garnish with fresh cilantro before serving.
