Ingredients

  • Corn tortillas - 4 small
  • Boneless, skinless chicken breasts - 250 grams
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red cabbage - 100 grams, thinly sliced
  • Carrot - 1 medium, grated
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Sriracha sauce - 1 tablespoon
  • Mayonnaise - 1 tablespoon
  • Honey - 1 teaspoon

Steps

  1. In a small bowl, mix olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper. Coat the chicken breasts with the spice mixture.
  2. Heat a grill pan or outdoor grill over medium-high heat. Cook the chicken for about 6-7 minutes per side, or until fully cooked and no longer pink inside. Remove and let rest for 5 minutes before slicing.
  3. In a mixing bowl, combine the sliced red cabbage, grated carrot, chopped cilantro, lime juice, Sriracha, mayonnaise, and honey. Toss until well combined to make the spicy slaw.
  4. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  5. To assemble the tacos, place sliced grilled chicken on each tortilla and top with a generous portion of the spicy slaw.
