- Shrimp - 250 grams, peeled and deveined
- Cauliflower - 300 grams, riced
- Cream cheese - 50 grams
- Butter - 30 grams
- Chicken broth - 240 ml
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, chopped
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet, sprinkle with paprika, cayenne pepper, salt, and black pepper. Cook for 3-4 minutes until the shrimp turns pink and opaque. Remove from heat and stir in lemon juice and chopped green onion.
- In a separate pot, bring the chicken broth to a boil. Add the riced cauliflower and cook for about 5-7 minutes until tender.
- Drain any excess liquid from the cauliflower and return it to the pot. Stir in cream cheese and butter until well combined and creamy. Season with salt and pepper to taste.
