- All-purpose flour - 1 cup (125g)
- Salt - 1/2 teaspoon
- Unsalted butter - 1/4 cup (60g), cold and cubed
- Ice water - 3-4 tablespoons
- Potatoes - 2 medium (about 300g), peeled and cubed
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cayenne pepper - 1/2 teaspoon (adjust to taste)
- Smoked paprika - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the flour and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
- Meanwhile, boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent, about 5 minutes.
- Mash the boiled potatoes in a bowl and mix in the sautéed onion and garlic, cayenne pepper, smoked paprika, black pepper, and fresh parsley. Adjust seasoning to taste.
- Preheat the oven to 200°C (400°F). Roll out the chilled dough on a floured surface to about 1/4 inch thick.
- Cut out circles of dough (about 4-5 inches in diameter). Place a spoonful of the potato mixture in the center of each circle.
- Fold the dough over to create a half-moon shape and pinch the edges to seal. Place the knishes on a baking sheet lined with parchment paper.
- Brush the tops with the beaten egg for a golden finish. Bake for 25-30 minutes, or until golden brown.
