Ingredients

  • Green or brown lentils - 1 cup
  • Vegetable broth - 2 cups
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1, juiced
  • Corn tortillas - 4
  • Fresh cilantro - 1/4 cup, chopped
  • Avocado - 1, sliced
  • Sour cream or yogurt - for topping (optional)

Steps

  1. Rinse the lentils under cold water and drain well.
  2. In a medium pot, bring the vegetable broth to a boil and add the lentils. Reduce the heat and simmer for about 20 minutes, or until the lentils are tender.
  3. While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  4. Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3-4 minutes until the pepper is tender.
  5. Stir in the cumin, chili powder, paprika, salt, and black pepper, cooking for 1 minute until fragrant.
  6. Once the lentils are cooked, drain any excess liquid and add them to the skillet. Stir to combine everything and cook for another 2-3 minutes.
  7. Remove from heat and stir in the lime juice.
  8. Warm the corn tortillas in a dry skillet for about 30 seconds on each side, or until pliable.
  9. Assemble the tacos by placing a generous spoonful of the lentil mixture onto each tortilla.
  10. Top with chopped cilantro, avocado slices, and a dollop of sour cream or yogurt if desired.
