- Green or brown lentils - 1 cup
- Vegetable broth - 2 cups
- Olive oil - 1 tablespoon
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
- Corn tortillas - 4
- Fresh cilantro - 1/4 cup, chopped
- Avocado - 1, sliced
- Sour cream or yogurt - for topping (optional)
Steps
- Rinse the lentils under cold water and drain well.
- In a medium pot, bring the vegetable broth to a boil and add the lentils. Reduce the heat and simmer for about 20 minutes, or until the lentils are tender.
- While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3-4 minutes until the pepper is tender.
- Stir in the cumin, chili powder, paprika, salt, and black pepper, cooking for 1 minute until fragrant.
- Once the lentils are cooked, drain any excess liquid and add them to the skillet. Stir to combine everything and cook for another 2-3 minutes.
- Remove from heat and stir in the lime juice.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side, or until pliable.
- Assemble the tacos by placing a generous spoonful of the lentil mixture onto each tortilla.
- Top with chopped cilantro, avocado slices, and a dollop of sour cream or yogurt if desired.
