- Green lentils - 150 grams
- Water - 500 milliliters
- Olive oil - 2 tablespoons
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Cumin powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Breadcrumbs - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Burger buns - 2
- Vegan BBQ sauce - 4 tablespoons
- Lettuce leaves - 2
Steps
- Rinse the lentils under cold water and drain them.
- In a pot, combine the lentils and water, bringing it to a boil. Reduce heat and simmer for about 20 minutes until tender. Drain any excess water and set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and grated carrot, cooking for another 2-3 minutes until softened.
- In a large bowl, combine the cooked lentils, sautéed onion mixture, cumin, smoked paprika, chili powder, salt, pepper, breadcrumbs, and chopped parsley. Mix well until fully combined.
- Form the mixture into two patties, pressing firmly to hold together.
- In the same skillet, add a little more olive oil and heat over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- Toast the burger buns lightly in the skillet if desired.
- Assemble the sliders by placing a lentil patty on each bun, topping with vegan BBQ sauce and lettuce leaves. Serve immediately.
