Ingredients

  • Green or brown lentils - 100 grams
  • Water - 500 ml
  • Red bell pepper - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the lentils under cold water and place them in a saucepan with 500 ml of water.
  2. Bring the water to a boil, then reduce the heat and simmer for about 20 minutes, or until the lentils are tender but not mushy.
  3. While the lentils are cooking, prepare the vegetables: dice the red bell pepper, cucumber, and red onion, and halve the cherry tomatoes.
