Ingredients

  • Red lentils - 100 grams
  • Water - 300 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1, diced
  • Cumin powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the red lentils under cold water and drain them.
  2. In a saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the lentils are soft and have absorbed most of the water.
  3. While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and onion, sautéing until the onion is translucent, about 5 minutes.
  4. Add the diced red bell pepper to the skillet and cook for an additional 3-4 minutes until softened.
  5. Stir in the cumin, smoked paprika, cayenne pepper, salt, and black pepper, cooking for another minute until fragrant.
  6. Once the lentils are cooked, add them to the skillet with the sautéed vegetables. Mix well and cook for 2-3 minutes to combine the flavors.
  7. Remove from heat and stir in the lemon juice.
  8. Let the mixture cool slightly, then transfer it to a food processor and blend until smooth, adding a little water if needed to reach your desired consistency.
  9. Serve the dip warm or at room temperature, garnished with fresh cilantro.
