- Red lentils - 100 grams
- Water - 300 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Red bell pepper - 1, diced
- Cumin powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the red lentils under cold water and drain them.
- In a saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the lentils are soft and have absorbed most of the water.
- While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and onion, sautéing until the onion is translucent, about 5 minutes.
- Add the diced red bell pepper to the skillet and cook for an additional 3-4 minutes until softened.
- Stir in the cumin, smoked paprika, cayenne pepper, salt, and black pepper, cooking for another minute until fragrant.
- Once the lentils are cooked, add them to the skillet with the sautéed vegetables. Mix well and cook for 2-3 minutes to combine the flavors.
- Remove from heat and stir in the lemon juice.
- Let the mixture cool slightly, then transfer it to a food processor and blend until smooth, adding a little water if needed to reach your desired consistency.
- Serve the dip warm or at room temperature, garnished with fresh cilantro.
