- Fresh spinach - 2 cups (60g), chopped
- Olive oil - 2 tablespoons (30ml)
- Onion - 1 medium (150g), diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium (100g), diced
- Celery - 1 stalk (100g), diced
- Canned diced tomatoes - 1 cup (240g)
- Vegetable broth - 2 cups (480ml)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Red chili flakes - 1/2 teaspoon (adjust for spice level)
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon (15ml), for serving
Steps
- In a medium pot, heat olive oil over medium heat. Add diced onion, carrot, and celery, and sauté for about 5 minutes until soft.
- Stir in minced garlic, ground cumin, ground coriander, and red chili flakes. Cook for another minute until fragrant.
- Add the brown lentils, canned diced tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer covered for 20 minutes.
- After 20 minutes, add the canned chickpeas and chopped spinach. Stir well and simmer for an additional 10 minutes until the lentils are tender and the spinach is wilted.
- Adjust seasoning with more salt and pepper if needed. Serve hot with a squeeze of lemon juice on top.
