- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Diced tomatoes - 400g (1 can)
- Vegetable broth - 500ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Red chili flakes - 1/2 teaspoon (adjust to taste)
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
