- Canned chickpeas - 240 grams (drained and rinsed)
- Fresh spinach - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium (chopped)
- Garlic - 3 cloves (minced)
- Carrot - 1 medium (diced)
- Celery - 1 stalk (diced)
- Diced tomatoes - 400 grams (canned)
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon (adjust to taste)
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the green lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery, and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the rinsed lentils, canned chickpeas, diced tomatoes, vegetable broth, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Bring to a boil.
- Reduce the heat to low, cover, and let simmer for 20 minutes, or until the lentils are tender.
- Stir in the fresh spinach and cook for another 2-3 minutes until wilted.
- Remove from heat and stir in the lemon juice before serving.
