  • Spinach - 100 grams (fresh or frozen)
  • Onion - 1 medium (chopped)
  • Garlic - 2 cloves (minced)
  • Carrot - 1 medium (diced)
  • Celery - 1 stalk (diced)
  • Diced tomatoes - 400 grams (canned)
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish (optional)

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
