- Celery - 2 stalks, diced
- Diced tomatoes - 400 grams (1 can)
- Vegetable broth - 500 milliliters
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh spinach - 100 grams
- Lemon juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Stir in the cumin, paprika, chili powder, salt, and black pepper. Cook for an additional minute until fragrant.
- Add the green lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, or until the lentils are tender.
- Stir in the canned chickpeas and fresh spinach, cooking for another 5 minutes until the spinach is wilted.
