- Celery - 1 stalk, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon

- Red pepper flakes - 1/4 teaspoon (adjust for spice preference)

- Fresh cilantro - for garnish, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, sautéing for about 5 minutes until softened.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the cumin, coriander, paprika, and red pepper flakes, cooking for another minute to release the spices' flavors.
