  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Red pepper flakes - 1/4 teaspoon (adjust for spice preference)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, sautéing for about 5 minutes until softened.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the cumin, coriander, paprika, and red pepper flakes, cooking for another minute to release the spices' flavors.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the lentils are tender.
  6. Stir in the drained chickpeas and allow to cook for an additional 5 minutes.
  7. Season with salt, black pepper, and lemon juice to taste.
