  • Lamb ribs - 800 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Onion powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Brown sugar - 1 tablespoon
  • Apple cider vinegar - 2 tablespoons
  • Hot sauce - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a bowl, mix the olive oil, minced garlic, onion powder, cumin, paprika, chili powder, black pepper, salt, brown sugar, apple cider vinegar, and hot sauce to create the marinade.
  3. Place the lamb ribs in a large resealable bag or a shallow dish and pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
  4. Once marinated, remove the ribs from the refrigerator and let them sit at room temperature for about 30 minutes.
  5. Place the ribs on a baking tray lined with aluminum foil and cover them with another piece of foil. Bake in the preheated oven for 2 to 2.5 hours until the ribs are tender.
  6. Remove the top foil and increase the oven temperature to 220°C (425°F). Bake for an additional 15-20 minutes to crisp the edges, basting with any leftover marinade halfway through.
  7. Once done, remove from the oven and let the ribs rest for 10 minutes before cutting.
  8. Garnish with fresh cilantro and serve with your favorite dipping sauce.
