- Paprika - 1 teaspoon

- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Brown sugar - 1 tablespoon
- Apple cider vinegar - 2 tablespoons
- Hot sauce - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 150°C (300°F).
- In a bowl, mix the olive oil, minced garlic, onion powder, cumin, paprika, chili powder, black pepper, salt, brown sugar, apple cider vinegar, and hot sauce to create the marinade.
- Place the lamb ribs in a large resealable bag or a shallow dish and pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
- Once marinated, remove the ribs from the refrigerator and let them sit at room temperature for about 30 minutes.
- Place the ribs on a baking tray lined with aluminum foil and cover them with another piece of foil. Bake in the preheated oven for 2 to 2.5 hours until the ribs are tender.
- Remove the top foil and increase the oven temperature to 220°C (425°F). Bake for an additional 15-20 minutes to crisp the edges, basting with any leftover marinade halfway through.
- Once done, remove from the oven and let the ribs rest for 10 minutes before cutting.
- Garnish with fresh cilantro and serve with your favorite dipping sauce.
