Ingredients

  • Salmon fillets - 2 (150g each)
  • Harissa paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Quinoa - 1 cup
  • Water - 2 cups
  • Fresh spinach - 200g
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a small bowl, mix the harissa paste, olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade.
  2. Place the salmon fillets in a shallow dish and coat them thoroughly with the harissa marinade. Let it marinate for 15 minutes.
  3. While the salmon is marinating, rinse the quinoa under cold water and then cook it in a saucepan with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the water is absorbed.
  4. In a separate skillet, heat a little olive oil over medium heat. Add the spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper.
  5. Preheat a grill or grill pan over medium-high heat. Cook the marinated salmon fillets for about 4-5 minutes on each side, or until cooked through and flaky.
