- Harissa paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Quinoa - 1 cup
- Water - 2 cups
- Fresh spinach - 200g
- Salt - to taste
- Black pepper - to taste
Steps
- In a small bowl, mix the harissa paste, olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade.
- Place the salmon fillets in a shallow dish and coat them thoroughly with the harissa marinade. Let it marinate for 15 minutes.
- While the salmon is marinating, rinse the quinoa under cold water and then cook it in a saucepan with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the water is absorbed.
- In a separate skillet, heat a little olive oil over medium heat. Add the spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper.
- Preheat a grill or grill pan over medium-high heat. Cook the marinated salmon fillets for about 4-5 minutes on each side, or until cooked through and flaky.
