Ingredients

  • ground elk meat - 500 grams
  • pork fat (or bacon) - 100 grams, finely chopped
  • garlic powder - 1 teaspoon
  • onion powder - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • red pepper flakes - 1 teaspoon (adjust to taste)
  • black pepper - 1/2 teaspoon
  • sea salt - 1 teaspoon
  • fresh parsley - 2 tablespoons, finely chopped
  • water - 30 ml

Steps

  1. In a large mixing bowl, combine the ground elk meat and chopped pork fat.
  2. Add garlic powder, onion powder, smoked paprika, red pepper flakes, black pepper, sea salt, fresh parsley, and water to the meat mixture.
  3. Mix all the ingredients thoroughly by hand or using a spoon until evenly combined.
  4. Shape the mixture into small sausage links or patties, about 5 centimeters long.
  5. Heat a non-stick skillet over medium heat and add the sausages to the pan.
  6. Cook the sausages for about 10-12 minutes, turning occasionally, until browned and cooked through.
  7. Remove from heat and let rest for a few minutes before serving.
