  • Canned chickpeas - 1 can (400g), drained and rinsed
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat tortillas - 2 large
  • Avocado - 1 medium, sliced
  • Cherry tomatoes - 100g, halved
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Greek yogurt - 4 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the drained chickpeas with olive oil, garlic powder, cayenne pepper, smoked paprika, salt, and black pepper. Toss to coat evenly.
  3. Spread the chickpea mixture on a baking sheet and roast in the preheated oven for 15 minutes, or until crispy.
  4. While the chickpeas are roasting, prepare the wraps by laying out the whole wheat tortillas.
  5. Top each tortilla with sliced avocado, roasted chickpeas, cherry tomatoes, and chopped cilantro.
  6. Drizzle lime juice over the filled tortillas and add a dollop of Greek yogurt on top.
  7. Wrap the tortillas tightly and serve immediately.
