- Canned chickpeas - 1 can (400g), drained and rinsed
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat tortillas - 2 large
- Avocado - 1 medium, sliced
- Cherry tomatoes - 100g, halved
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Greek yogurt - 4 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine the drained chickpeas with olive oil, garlic powder, cayenne pepper, smoked paprika, salt, and black pepper. Toss to coat evenly.
- Spread the chickpea mixture on a baking sheet and roast in the preheated oven for 15 minutes, or until crispy.
- While the chickpeas are roasting, prepare the wraps by laying out the whole wheat tortillas.
- Top each tortilla with sliced avocado, roasted chickpeas, cherry tomatoes, and chopped cilantro.
- Drizzle lime juice over the filled tortillas and add a dollop of Greek yogurt on top.
- Wrap the tortillas tightly and serve immediately.
