Ingredients

  • Canned chickpeas - 1 can (400g), drained and rinsed
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small (about 6 inches)
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Sour cream or yogurt - 2 tablespoons (optional)

Steps

  1. In a medium bowl, combine the drained chickpeas, olive oil, garlic powder, cumin, paprika, chili powder, salt, and black pepper. Toss until the chickpeas are well-coated.
  2. Heat a skillet over medium heat. Add the chickpea mixture and cook for 5-7 minutes, stirring occasionally, until the chickpeas are heated through and slightly crispy.
  3. While the chickpeas are cooking, warm the corn tortillas in a separate pan over low heat for about 1-2 minutes on each side until pliable.
  4. To assemble the tacos, divide the spicy chickpeas among the warm tortillas.
  5. Top with sliced avocado, fresh cilantro, and a dollop of sour cream or yogurt, if using.
  6. Serve with lime wedges on the side for squeezing over the tacos.
