- canned chickpeas - 1 cup (240g), drained and rinsed
- red onion - 1/4 cup, finely chopped
- fresh cilantro - 1/4 cup, chopped
- garlic - 2 cloves, minced
- ground cumin - 1 teaspoon
- cayenne pepper - 1/2 teaspoon
- paprika - 1/2 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- all-purpose flour - 3 tablespoons
- baking powder - 1/2 teaspoon
- water - 2 tablespoons
- vegetable oil - for frying
Steps
- In a bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth but with some chunks remaining.
- Add the chopped red onion, cilantro, minced garlic, ground cumin, cayenne pepper, paprika, salt, and black pepper to the mashed chickpeas. Mix well.
- Sprinkle the all-purpose flour and baking powder over the mixture, then add the water. Stir until combined and the mixture holds together.
- Heat vegetable oil in a frying pan over medium heat, enough to cover the bottom of the pan.
- Once the oil is hot, scoop tablespoon-sized portions of the chickpea mixture and carefully place them in the oil, flattening slightly to form fritters.
- Fry the fritters for 3-4 minutes on each side or until golden brown and crispy. Remove and place on a paper towel-lined plate to absorb excess oil.
- Serve warm with a side of yogurt sauce or your favorite dipping sauce.
